HEALTHY HALLOWEEN: BANANA PUMPKIN BREAD FROM RETREAT CAFE

Nothing calls to us on a cold fall day like a fresh baked banana bread straight out of the oven. We have asked Kimberly Parsons, the masterful holistic chef and founder of Retreat Cafe  to create this beautiful autumnal recipe packed with so much goodness. Bananas are a terrific energy food and a great source of potassium, an essential mineral for maintaining normal blood pressure and heart function.They add moisture and sweetness to baked goods, which means you can reduce the amount of sweetener and oil considerably.  Almonds are packed full of protein + heart healthy fats that are kind to your arteries and can help lower cholesterol as well as keep blood sugars stable. This makes a nice change from typical store bought and cafe style banana breads that are generally high in refined white flour, sugar and saturated fats. 


RETREAT CAFE BANANA BREAD

Makes 1 loaf


INGREDIENTS

150g smashed ripe banana

150g pumpkin puree

3 free range, organic eggs

72g raw honey or organic maple syrup

1 teaspoon vanilla

60g cold pressed olive oil

Half tsp ground cinnamon

Half tsp baking soda

1 tbsp lemon juice

100g millet flour

150g ground almonds

25g chia seed

INSTRUCTIONS

Preheat oven to 160°C. Line a loaf tin with baking paper. In a large mixing bowl, combine mashed bananas, pumpkin puree, eggs, honey, vanilla, oil, cinnamon, baking soda and lemon juice. (The lemon juice will activate the baking soda). Now add the millet flour, ground almonds and chia seeds. Mix well. 

Spoon batter into loaf tin and for decoration, cut the extra banana down the middle, length ways and then place cut side up on top of the batter. Place in the oven on the middle shelf and bake for 60 minutes.  

This is a very moist loaf, a skewer may not come out completely clean but if the centre feels firm then remove from the oven and allow to cool completely before turning out. 

To serve, place a slice of banana bread under the grill . Once browned, remove from the heat and place on a serving plate along with a dollop of whipped coconut yoghurt and a drizzle of honey.
